Vin CERVEAUX is negociant project of LEVIN Wines, a family-owned, organic producer based in Touraine, Loire Valley, which has always eschewed convention. With Vin CERVEAUX, they produce wines beyond the restrictions of their appellation and certification.
Vigneron and négociant-eleveur, Lynne Levin produces the Vin CERVEAUX label directing fruit sourcing, oeneology and blending, guided equally by left brain logic and right brain intuition. In contrast to the Bourré domaine, LEVIN Wines, Vin CERVEAUX sources fruit from sustainable and organic growers beyond the estate. Lynne works with her team of Loire Valley winemakers to coax the greatest expression from these fruit parcels to finish this authentic, intelligent vin.
2014 VIN CERVEAUX POUILLY-FUMÉ AOC Negociant label grown and made sustainably
Sommelier Wine Awards 2016 – SILVER
Made from fruit grown in the Pouilly-Fumé on Kimmeridgian marl. A complex and aromatic nose combining lotus blossom, elderflower and citrus notes, opening to AOC classic flinty characters on the lively, balanced palate, with layers of greengage, fresh white stone fruit, citrus, textured and racy minerality and excellent length.
SWA Judges’ Tasting notes: ‘Elegant nose with aromas of flint and citrus. Very well balanced on the palate with racy minerality and clean fruit, with a long, mineral finish,’ said Georgi Mihov of Bohemia Bar and Restaurant, while Gregg Lambert of Galvin La Chapelle noted ‘greengage and fresh stone fruit, with a flinty note’.
2015 VIN CERVEAUX SAUVIGNON BLANC Negociant label grown and made sustainably
Sourced from the maritime-influenced western edge of the Loire Valley on limestone and flint clay. Zippy citrus notes, subtle white peach and elderflower undertones and freshly mown meadow finishing lean with mouth-watering acidity.
Environmentally friendly viticulture methods respecting organic philosophies and adapted to suit each terroir. Following cold stabilisation, fermentation takes place at low temperatures in temperature-controlled stainless-steel tanks to preserve the aromatics and refreshing acidity.
This Pouilly-Fumé 2014 was made from 100% Sauvignon Blanc grapes, grown and vinified within the Pouilly-Fumé AOC on the eastern edge of the Loire Valley. The soils were originally formed in the Jurassic period (160 million years ago) from the calcareous marine deposits of an ancient inland sea. The Kimmeridgian marl, hard limestone and flint clay and temperate continental climate produce smoky citrus, gunflint and oyster shell minerality, delicate floral notes and ripe grapefruit characters.
